I tried to add two products that would not support a few payment options. It didn't work. Then I set up categories (Per Product Categories) and this option worked exactly as I wanted.

Zero documentation and not working. Besides, if you want to enable this per product, you must upgrade to a paid pro version. Will find something else that does actually work.
